Medicated Paleo Pumpkin Bites (GF)
Paleo Pumpkin Bites

Ingredients
160 grams of Cassava Flour (approx. 1 cup + 2 TBS)
2 tsp baking powder
1/4 tsp salt
1 & 1/2 tsp of Primal Palate Pumpkin Pie Spice
1 egg
1/4 cup almond or cashew milk (regular milk if tolerated)
1/4 cup of medicated ghee
1/2 cup of pumpkin
4 TBS maple syrup
1/2 TBS maple sugar or Primal Palate Cinnamon Sugar Cookie Blend
Instructions
Preheat oven to 400 degrees and line a large baking sheet with parchment paper.
In a small bowl whisk cassava flour, baking powder, salt, and pumpkin pie spice.
In a medium bowl mix egg, milk, ghee, pumpkin, & maple syrup until well combined. Do not over mix.
Add dry ingredients to wet ingredients and mix until just combined. Dough should be moist and slightly tacky.
Roll into one inch balls and space about 1 inch apart on baking sheet. Sprinkle with maple or cinnamon sugar.
Bake for 10-12 minutes or until an inserted toothpick comes out clean. Cool on a rack.
Notes
If you follow the medicated ghee recipe as written this recipe will make approximately 24 - 10mg medicated bites. If you use a different concentration be sure to do the math to figure out the dose per piece.
While I’ve never used all purpose flour in this recipe due to my need for gluten free, cassava flour is a 1:1 sub so you should be able to swap it if cassava isn’t your thing!
